Gourmet Meats

In our beef operation, our primary goal is to provide an excellent piece of beef raised to the customer's specifications. That's why we raise Highland Cattle, Belted Galloway Cattle, and White Galloway cattle as steers. All of these cattle are well known for producing lean meat; low in cholesterol with high protein content, still maintaining the most flavorful beef available.
Our grass fed beef are normally scheduled to be butchered in July. This is the time that the pastures begin to dry up. This is our most cost efficient meat, as there is no finishing time involved. This beef is still a very tender, lean meat. The next most cost efficient are our animals raised on pasture and haylage. These animals are available year round.
Our grain finished beef are also available year round. These animals are fed grain for approximately 90 days prior to butchering. They are also fed second cutting hay, and an unlimited supply of water. This produces well marbled meat with more back fat. This enables us to hang the carcasses for a longer amount of time than our grass fed beef. This produces a very tender, flavorful aged beef. for those who enjoy this type of beef.
Our cattle are transported live to our local U.S.D.A. approved butcher. We can also have the animal sent to the butcher of your choice.
A complete package is included due to the fact that the customer also receives the hide, and horns (of the Highland Cattle). The Belted Galloway makes a very attractive hide also.
All of our cattle are free of hormones, steroids, and antibiotics. They are all raised on T.L.C. (tender loving care)!
If you are interested in any of our meats, please contact us 8 - 12 weeks prior to your desired date. We also raise turkeys and capons on a seasonal basis.
